Canned anchovy is a semi-preserved product. In this kind of product no heat treatment is made and food safety is guaranteed through salt content and low water activity. During production process, wild fish is caught and put into barrels with salt and saturated brine for maturation. During maturation, anchovy muscle acquire salt until water phase salt is â?¥% and/or water activity is <0.83. After that, fish is processed to fillets and canned with oil.
